Triglycerides 🍟

  • Definition: A yummy molecule (not actually edible in its raw form!) made by joining three fatty acids and one glycerol.
  • How's it Made?
    • Via 🌊 condensation reactions, think of it as LEGO bricks coming together!
    • Each time a fatty acid and glycerol combine, a water molecule pops out. It's like squeezing a sponge! Do it thrice, and you get three water molecules.
    • The special link between fatty acid and glycerol is called the ester bond (imagine it as the superglue holding our LEGO bricks together).
      • Fun Fact: Ester bonds are like a handshake 🤝 between the acid part of the fatty acid (carboxyl –COOH group) and the alcohol part of the glycerol (hydroxyl –OH group).
    • Since we use up the only friendly, water-loving (hydrophilic) parts in this bonding, triglycerides turn into complete water-haters (hydrophobic).
  • Are they Oils or Fats?
    • Depends on the type of fatty acids in the mix! Think of it like choosing ingredients for a smoothie; different ingredients = different taste & texture.

Phospholipids 🍳

  • Structure Peep: They're like the cousin of triglycerides! But with a twist.

    • They have two fatty acids and one glycerol.

    • BUT, instead of the third fatty acid, they sport a cool phosphate group.

  • Water Love-Hate Relationship

    • The phosphate head is like you at a pool party - loves to jump in (hydrophilic)!

    • But the fatty acid tails? They're the shy ones, avoiding the water (hydrophobic).
